CHRISTMAS WITH STORTI: COTECHINO AND LENTILS

A REAL CLASSIC FOR THE HOLIDAYS AND NEW YEAR’S EVE

What’s more Christmassy than celebrating New Year’s Eve – or New Year’s – with a nice plate of lentils and cotechino? As the tradition puts it lentils brings good luck and money also. It’s a typical tradition of Mantova and Modena, a dish which is surely ‘poor’ but with a great amount of proteins and good fats, tasty and savoury, especially if you use our cotechino.

So here you are this Holidays’ recipe, ideal to celebrate the new year with friends and family, with taste and – hopefully – luck!

INGREDIENTS FOR 4 PERSONS:

  • 400 gr of cotechino Storti
  • 300 gr of dry lentils
  • 1 onion
  • 1 celery
  • 1 carrot
  • Extravirgin olive oil
  • Salt and pepper as needed

Put the lentils into cold water in a pot the night before, in order to soften them. Leave the lentils in the water for about 10-12 hours.

The day after, prepare the mirepoix by cutting the celery, the carrot and the onion and putting them into a pan with extravirgin olive oil. When the mirepoix gets to a golden colour add the lentils and some water. Let them cook, stirring them every now and then. Adjust salt and pepper at the end.

In the meantime, warm the cotechino in a baine-marie for about 10 minutes and put the lentils into some cups and add some slices of cotechino per each cup. Instead of the lentils, or in addition to them, you can also have some mashed potatoes.

Try the whole with some good Lambrusco of Mantova, or if you want a still red wine instead, combine the dish with either a Gutturnio or a Sangiovese of Emilia Romagna.
